What are cookies and how are they used? Cookies are text strings sent by a web server (e.g. the site) to the user's Internet browser, which is automatically stored on the user's computer and automatically sent back to the server at each occurrence or subsequent access to the site. By default, almost all web browsers are set to automatically accept cookies.
There are different types of cookies, depending on the characteristics and functions they have, these can remain on a user's PC or mobile for different periods of time.
- "session" cookies that are stored on the user's computer for mere technical-functional needs, for the transmission of session identifiers necessary to allow safe and efficient exploration of the site; they are deleted at the end of the "session" (hence the name) when the browser is closed. This type of cookie avoids the use of other IT techniques that are potentially detrimental to the confidentiality of users' browsing
- "persistent" cookies that remain stored on the computer hard drive until their expiration or cancellation by users / visitors. Through persistent cookies, visitors who access the site (or any other users who use the same computer) are automatically recognized at each visit. Persistent cookies satisfy many functions in the interest of surfers (such as the use of the navigation language or the registration of the shopping cart in online purchases). However, persistent cookies can also be used for promotional or profiling purposes (for example, for the display of personalized behavioral advertising and for the analysis and monitoring of website visitor behavior) and in this case their use requires the user's prior consent. Visitors can set the computer browser so that it accepts / rejects all cookies or displays a warning every time a cookie is proposed, in order to be able to evaluate whether to accept it or not. The user is enabled, however, to change the default configuration (by default) and disable cookies (i.e. block them permanently), by setting the highest protection level

These two types of cookies (session and persistent) can in turn be:
- "first part" cookies when they are managed directly by the owner and / or manager of the website
- "third party" cookies when cookies are set up and managed by managers unrelated to the website visited by the user.
